Winzer im Herzen des Duché D'Uzès. ​ Das Domaine de L’Aqueduc liegt in Saint-Maximin, inmitten der wunderschönen Region von Uzès. Entstanden ist es aus der perfekten Mischung von Passion und Wissen. Die Weine sind geprägt von steinigen, lehmigen, sowie kalkigen Böden dieses Terroirs. Jede Cuvée widerspiegelt die Komplexität des einzelnen Terroirs, und ermöglicht so eine hohe Geschmacksvielfalt. Die hohe Anzahl an Sonnentagen ist der wichtigste Faktore, um diese außergewöhnliche Weine zu kreieren. Das Domaine und das Terroir Yves Rousset-Rouard, ein gebürtiger Marseiller, verliebte sich in das Anwesen und kaufte dieses historische Haus. Er verließ sein Leben, das dem Kino und dem Theater gewidmet war, und begeisterte sich für den Weinbau. Er kaufte einen Bauernhof mit 8 Hektar Land. ​ Hauptsächlich in der Gemeinde Ménerbes, an den Nordhängen des Luberon gelegen, verteilt sich das Domaine de La Citadelle auf vier Terroirs und Klimazonen und ist in 74 Parzellen unterteilt. Die Weinberge liegen in Höhenlagen von bis zu 300 Metern ü. Meer. Jede Parzelle erfordert eine präzise und sorgfältige Bearbeitung, um den Ausdruck des Terroirs und der Rebsorte jeder einzelnen Parzelle hervorzuheben. Seit 2016 ist das Weingut biologisch zertifiziert. In ständiger Sorge um die Qualität wird der Ertrag wird durch verschiedene Maßnahmen begrenzt, die vom kurzen Rebschnitt bis zum starken Entblättern und in manchen Jahren sogar zur Grünlese reichen. ​ Seit Jahren kommen bekannte Politiker und Stars aus der ganzen Welt, um Ihren Wein vor Ort zu kaufen - die Wände des Domaines sind voll mit Beweisbilder.. ​ ​ ​ Der Weinkeller ​ Die natürliche Neigung des Hügels, auf dem die Kellerei gebaut ist, wird genutzt, um alle Arbeitsschritte von der Ernte bis zur Abfüllung mit Hilfe der Schwerkraft durchzuführen. Die Trauben fallen direkt in die Weinkeller. Alle Bottiche sind aus thermoreguliertem Edelstahl gefertigt, was eine konstante Temperaturkontrolle während der Gärung ermöglicht. Bei der Vinifizierung der Rotweine bevorzugen wir eine sanfte Extraktion der Tannine, der Farbe und der aromatischen Komponenten. Die Kelterung der Weiß- und Roséweine erfolgt mit einer pneumatischen Membranpresse. Die Jahrgänge "Artèmes" und "Gouverneur Saint-Auban" reifen durchschnittlich 12 Monate in Eichenfässern und Bottichen. Nach seinem Studium des Weinbaus und der Önologie übernahm er den Familienbetrieb und begann mit der Vinifizierung der Trauben, die er auf seinem Weinberg anbaute.
